"Southwest Lasagna"

This is a recipe I developed just because it sounded good. You can change the flavor a lot by using different types of cheese, salsa, and peppers, so have fun with it!

Two 15-oz cans black beans, drained and rinsed
1¾ lb hamburger, browned and drained
½ large onion, chopped
salt
pepper
1½ cup picante style salsa
about 12 corn tortillas
One 7-oz can chopped green chilies
cheddar or pepper jack cheese, grated or thinly sliced

Brown the hamburger and chopped onion. Add salt and pepper to taste. Add the salsa and simmer for 5-10 minutes to set the flavor (don't let it dry out).

Generously grease the bottom and sides of a 9 X 13 baking dish. Spread 6 corn tortillas on the bottom of the pan. Spread half the hamburger mixture on top of the tortillas. Spread half the black beans on top of hamburger. Sprinkle half the chopped green chilies on top of beans. Top with grated or thinly sliced cheddar or pepper jack cheese. Repeat another another layer of each ingredient.

Bake at 350 degrees F for 30-40 minutes until it's heated through and the top layer of cheese begins to brown.
