GF Italian meatballs
Posted November 2013
An Italian great-aunt taught me to make these meatballs (and homemade spaghetti sauce) when I was in grade school. I really haven't changed the recipe except to substitute gluten-free breadcrumbs.
1 lb very lean hamburger
½ lb ground pork breakfast sausage
2 cups GF breadcrumbs (see below to make your own)
½ onion grated or ½ tsp onion powder
¼ tsp dried sweet basil
½ cup water
1 egg
½ tsp garlic powder
¼ cup olive oil
Mix ingredients well. Shape into meatballs about 1¼ inch in diameter. Fry in a little olive oil until brown and cooked through. Add to your favorite sauce and simmer for 45 minutes or an hour.
To make the breadcrumbs, let slices of GF bread sit out until dry; then grate or process into breadcrumbs. If you’re in a hurry, you can lightly toast the bread to dry it out.
