
Gluten-free, dairy-free banana bread

Beat together:
3 mashed bananas
1 cup brown sugar, firmly packed
1/4 cup granulated sugar
Mix in:
1 cup teff flour
1/2 cup superfine almond flour
1/2 cup sorghum flour
1/2 cup potato starch
Melt 1/2 cup coconut oil and mix into the batter
Stir in 1/2 cup coconut milk
Beat in:
3 eggs
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon xanthan gum powder
3 teaspoons vanilla extract
3 teaspoons apple cider vinegar
3 teaspoons ground cinnamon
1/2 teaspoon ground allspice
Divide batter into two greased 9” X 5” loaf pans. Bake at 350 degrees F for 40-50 minutes, until a toothpick or knife inserted into the bread comes out clean. Let cool in the pans for 10 minutes and then remove from the pans.
