Gluten Free Apricot Nut Breakfast Bars

I really enjoy these breakfast bars. They have more protein and less sugar than many breakfast bars.  The seeds, nuts, oats, and apricots provide also provide fiber and a variety of nutrients to start your day.  If you want the breakfast bars a little sweeter, you can add some granulated white sugar or a little more maple syrup, but I like them this way.  You can also add chocolate chips or other kinds of dried fruit. 

In a food processor, mix until you have a coarse paste:
     8 large dates
     1 ¼ cup coarsely ground raw unsalted almonds
     ¼ cup sesame tahini (I used unsalted)
     ½ cup unroasted, unsalted cashews
     ¼ cup unflavored pea protein powder
     1 cup water
     ½ cup coconut flour
    
½ cup GF oat flour

Move the nut mixture to a bowl and add:
     2 teaspoons salt (less if other ingredients contain salt)
     4 teaspoons vanilla extract
     2 eggs
     4 tablespoons maple syrup (honey would probably work fine also)
     1 cup chopped pecans
     1 cup chopped dried apricots
     1 ½ cups old fashioned GF rolled oats
     ¼ cup raw pumpkin seeds
     ¼ cup sunflower seeds

Lightly oil a shallow pan (I used a 12 ½ inch X 12 ½ inch pan) and spread the mixture in the pan.  Bake at 325 ⁰F for about 30 minutes, until baked through.  Baking at higher temperatures will scorch the maple syrup or honey.
